In this technology, the cell tissue of rice bran is hydrolyzed with protease and then oil is released to achieve the purpose of oil extraction (Hanmoungjai et al. 2001 ). In a previous study, Chen ( 2014) used alkaline protease to extract oil from rice bran and determined the optimal process parameters.
The steps that occur in a typical rice bran oil refining process, along with the by-products generated are given in Fig. 14.1. Generally, the first step in the refining process with crude rice bran oil is dewaxing or winterizing, although for other vegetable oils the dewaxing step can be done at different times in the refining process.

Degumming. Rice Bran oil contain phosphatides like other oils 1.5% max. This will be removed through the standard degumming process by addition 2% water and 1kg to 1.5Kg of food grade phosphoric acid to the oil at 60°C and allowing to mix for 20 minutes and then by separating through the centrifugal separators.

Effect of the full refining process on rice bran oil
The effects of the chemical refining process on the minor compounds of rice bran oil and its heat stability were investigated. After 8 h of heating, about 50% and 30% of total tocopherols remained in crude and refined rice bran oil, respectively. The individual tocopherols were differently affected by the refining process.
