Apricot kernel is the innermost part of the apricot fruit. Most of the time, apricot fruit seeds are discarded as waste or byproduct in the food processing units (Gezer et al., 2011), but it has good potential source of oil, protein, vitamins, fibre, essential minerals, and many bioactive components (Akhone et al., 2022).
Apricot kernel oils are edible and can be used for salads and frying oil compared to the oil yield of some commercial seed oils such as soybean (15–20%), cottonseed (30–36%), sunflower (36–55%) (Shariatifar et al. 2017). The oil is quite similar to almond oil and its applications are also similar.
Effect of oilseed roasting on the quality, flavor and safety
Many unexplored or underexplored oilseeds with high oil contents or abundant bioactive compounds are good for consumable or industrial purposes. Their oils are known as minor oils or unconventional oils, such as safflower, pumpkin, flaxseed, apricot, chia seed and so on (Yashi, Semwal, & Dhiman, 2020).

Wheat germ oil showed the highest content of total sterols at 1713.80 mg/100 g of oil, followed by apricot kernels at 285.55 mg/100 g of oil and pumpkin seeds at 218.33 mg/100 g of oil. The most prevalent sterols was β-sitosterol, and its content ranged between 987.57 mg/100 g of oil in wheat germ and 67.35 mg/100 g of oil in nigella.

Apricot kernel oil is a good source for tocols (Table 22.1). γ-tocopherol is the predominant tocopherol detected in apricot oils in the range of 346–563 mg/kg, followed by α-tocopherol (14.9–26.8 mg/kg) and δ-tocopherol (8.56–18.9 mg/kg). γ-tocopherol exhibits strong antioxidant activity and improves the oxidation stability of low-stability vegetable oils (Turan et al., 2007).
