In this chapter, amaranth seed oil composition will be presented. The main component of this oil is triacylglycerols (TAGs). TAGs are composed of fatty acids, which have an important effect on oil stability, application, and nutritional properties. POL, PLL, POO, OLL, and LOO are the predominant TAGs in the amaranth seed oil. Linoleic acid (C18:2), oleic acid (C18:1), and palmitic acid (C16:0
Cold pressed amaranth (Amaranthus tricolor) oil
This oil contains 25% oleic acid, 50% linoleic acid, and 1% linolenic acid. Other reported lipid fractions are phospholipids, glycolipids, sterols, and squalene. Amaranth oil contains between 6% and 11.2% squalene, considerably more than the amount in other cereal oils, and is a 30-carbon polyunsaturated, triterpenic hydrocarbon (2,6,10,15,19
However, a potential source of squalene is Amaranthus seed because its oil contains considerably higher amounts of squalene than other vegetable oils. The oil content in Amaranthus seed is only about 4–8%, but oil from amaranth seeds contains 6–8% of squalene (ca. 0.4% of the total seed mass) [4], [10].

The Dual Nature of Amaranth—Functional Food and Potential
Oil pressed from amaranth seed is also very popular . Amaranth oil is well known as a functional food . A very important property (advantage) of amaranth oil is that it is highly resistant to oxidation. During long-term storage, small changes in the fatty acid composition are observed . It is worth noting that the iron content in Amaranth seed

CHARACTERIZATION OF AMARANTH SEED OILS, GAMEL, 2007
The oil fractions of Amaranthus caudatus L. and Amaranthus cruentus L. seeds were studied after different treatments of the seeds. The oil contents were 7.1 and 8.5% for raw A. caudatus L. and A. cruentus L. seeds, and consisted of 80.3–82.3% of triacylglycerols (TAGs). Phospholipids represented 9.1–10.2% of the oil.
Further research on application and stability is necessary, however; the stability of the adapted amaranth oil containing DHA could be improved by adding antioxidants (Pina-Rodriguez and Akoh 2009). Since amaranth oil has a similar composition to corn oil and cotton seed oil, it can be used as an edible oil (Lyon and Becker 1987).
