In this study, RSM design was used to optimize the protein extraction process from kiwi fruit seeds on the basis of the single factor tests. The surface graphs indicated that maximum protein yield could be obtained by extracting kiwi fruit seeds with 1:8.4 (w/v) solid/liquid ratio, pH 9.14, and 49.2 min extraction time at 33.9°C.
