Previously, Chirinos et al. (2015) evaluated the physico-chemical properties of Plukenetia huayllabambana and Plukenetia volubilis seed oil and reported acid value, free fatty acids, PV and p-AV in the range of 0.31–0.37 mg/g, 0.15–0.19% oleic acid, 1.83–2.90 meq O 2 /kg and 0.21–0.29 meq/kg

Techniques for extraction, characterization, and application
In recent years, sacha inchi (Plukenetia volubilis L.) has attracted interest as they contain oil rich in unsaturated fatty acids. This review describes the extraction techniques (soxhlet, cold pressing, enzymatic, and supercritical fluid extractions) of sacha inchi seed oil (SISO) and the analysis of its composition in terms of nutritional content, physicochemical properties, phytosterols,

Characterization of sacha inchi (Plukenetia volubilis L.) oil
Three oil samples obtained from sacha inchi (Plukenetia volubilis L.) seeds were studied by means of FTIR and 1 H NMR. Frequency data of the most significant bands of the IR spectrum of this oil are given. These data show that sacha inchi oil has a high degree of unsaturation.
Sacha inchi seeds are nutritionally superior as a good source of oil (~41%), protein (~27%), and bioactive compounds [ 4 ], such as polyphenolic compounds, phytosterols (stigmasterol and campesterol), and tocopherols. The oil is rich in unsaturated fatty acids (~93% of total lipids). Essential fatty acids in the seeds comprise 33% α-linoleic

The present study describes an efficient and sustainable synthesis method for producing functional triglycerides (FTs) by conducting an acidolysis reaction of sacha inchi (Plukenetia volubilis) oil with capric acid (C10), catalyzed by Rhizopus oryzae (RO) lipase immobilized in low-cost corn cob powder, to obtain medium-large-medium chain (MLM) triglycerides.

Due to its high content of omega-3, omega-6, and omega-9 fatty acids, this oil is used in medical and cosmetic applications [10]. Figure 1 . The processed leaves of sacha inch (Plukenetia volubilis. oil and are the highestobserved among all vegetable oils previ- ously studied in our laboratory (11); this is probably due to the high proportion of polyunsaturated groups in the sample.
