Optimization of a soft degumming process of crude rapeseed oil—Changes in its antioxidant capacity
Unexpectedly, the soft degummed rapeseed oils revealed approximately 1.3 times higher FRAP results (301–328 μmol TE/100 g) than the crude rapeseed oil (260 μmol TE/100 g). These results confirm that the antioxidants present in crude rapeseed oil form complexes with metal ions, leading to a decrease in their ability to reduce Fe 3+ -TPTZ complex to Fe 2+ -TPTZ.
