This study focuses on characterization of almond kernel oils extracted mechanically from five sweet almond varieties ‘Marcona’, ‘Fournat’, ‘Ferragnes’, ‘Ferraduel’ and ‘Beldi’), cultivated in eastern Morocco. Oil content, physicochemical parameters, triacylglycerol and fatty acid compositions were determined.
