Plant can be used to produce edible oil from their seeds, germs, and/or fruits. In the early human history, sesame ( Sesamum indicum ) oil and olive ( Olea europaea ) oil were commonly used as EPOs. With the development of agriculture, processing and inspection technologies, more and more plants have been developed for EPO production.
Commercial plant germ oil is mainly taken from cereal grain like corn, wheat, and rice bran oil, etc. The germ represents 2%–3% of the grain (corn germ represents 5%), and it is removed during the milling process. The lipid content in the germ varies with the grain types and sometimes it can be as high as 60%.

Orsavova et al. ( 2015) studied PUFAs made up the majority of fatty acid compositions in seven oils: safflower oil, grape oil, Silybum marianum oil, hemp oil, sunflower oil, wheat germ, and pumpkin seed oil. Their contents ranged from 54.3% in pumpkin seed oil to 79.1% in safflower oil.
In edible oil refining, the continuous effort to reduce overall production costs is mainly achieved by increasing plant capacities, installation of mono feedstock plants, and increasing the degree of automation. Over the years, more energy-efficient processes and technologies, resulting in a higher refined oil yield, have gradually been introduced.

Soybean oil is the second most consumed edible oil in the world after palm oil. It is also the most consumed vegetable oil in both China and the United States. In non-food application, soybean oil has also been used in the production of biodiesel which can probably perform better than the traditional gasoline (Demirbas 2007 ; Coppo et al. 2014 ; Vicente et al. 2010 ).
