Edible oils are processed from oil seeds of various types, as shown in the Process Flow Diagram (Figure 1). First, oil seeds must be procured and approved based on their quality characteristics. Oil seeds should be cleaned and sifted to remove extraneous matter and conditioned or pre-treated.
Production: Oil seeds are the third most important commodity in terms of production and export in Ethiopia. To narrow the gap between seed demand and seed supply, farmers are encouraged and supported to organize themselves in seed producer cooperatives (SPCs) to produce and sell quality seed (Ayana et al. Citation 2013; Subedi and Borman Citation 2013). The government encourages SPCs to engage in seed production and supply to the market.

As a result, there was a lively discussion on the production of virgin oil versus refined oil. According to international standards, virgin oil can be exported; however, in Ethiopia this is not allowed. Due to the current machinery a healthy production of edible oil cannot be guaranteed.
