The nutritional value of pumpkin seeds is based on high protein content (25–51%) (Bombardelli and Morazzoni 1997) and high percentage of oil that ranging from 40% to 60.8% (Fokou et al. 2009; Achu et al. 2006 ). The variability in the oil content of pumpkin seed is due to its broad genetic diversity.

To achieve the aroma and colour typical of pumpkin seed oil, production includes a roasting step, in which pressed pumpkin seeds are exposed to temperatures of 110 C and above for up to 60 min.
The production methods of pumpkin seed oil include pressing, leaching, subcritical low-temperature extraction technology, etc. The quality produced by the pressing method is good and relatively safe, with no chemical solvent residue.
Physicochemical properties and stability of pumpkin seed oil as affected by different extraction methods and species
The present work evaluated the influence of extraction method and species on the physicochemical properties, oxidative stability, fatty acid profiles, and rheological behaviour of pumpkin seed
These values are higher than those reported in the literature for the lipid extract obtained from pumpkin seeds/pulp with pressurized carbon dioxide (4.09 to 51.24 mg TOC per 100 g oil) [14], [21] and for pumpkin seed oil (13.23 to 76.02 mg TOC per 100 g oil) [14], .
Oil extraction from structured bed of pumpkin seeds and peel using compressed propane as solvent
The extracts obtained through from the structured bed showed oil yields of 12.56 to 15.36% and for the extraction from the seeds only the oil yield was 21.79%. Low yields were observed when only the peel was used in the extractor (3.44%).
The tangent curve and generalized Maxwell models adequately (R2 = 0.996) described the compression and relaxation processes of pumpkin seeds oil extraction. Peroxide value increased with temperatures.
